Prior to this event, in the first instance the responsibility for compliance with the product specification lies with the producers in the form of self-control (“autocontrôles” in the French version)116. As a second step, there must be a further verification with the same purpose117, carried out by a competent authority for official controls118 or by a body to which these tasks have been delegated119 and which has been duly accredited (according to standard EN ISO/IEC 17065 or standard EN ISO/IEC 17020, depending on the function performed)120. In the case of a TSG produced in a third country, this is the responsibility of the authorities designated by the country of origin or a product certification body121, which is also accredited. If the aforementioned checks have a positive outcome, the subject examined is entitled to obtain – accordingly to the provisions of the State of reference – a certificate of conformity to the specification for its product or inclusion on the list of approved operators122. These certificates are not definitive, but subject to updating, again on the basis of a risk assessment. After placing on the market, the control of compliance with the specification is the responsibility of public authorities designated by the Member States, which may also coincide with those in charge of a similar task vis-à-vis producers, mentioned above. The same authorities are also responsible for market controls to safeguard the protection granted to TSG names and symbols. This action is aimed at countering any use of them in relation to products or services that are not entitled to use them123. The pizza chef who wishes to offer the Pizza Napoletana TSG124 to the public in his establishment, presenting it as such, must also undergo such checks.
