Tradition is therefore a value, protected by the European Union and by the two UNESCO conventions with different tools and methods. In the first case, the approach is aimed at reserving the production of traditional foods for those who respect the elaborate and time-consuming recipes, the advertising of which mainly responds to commercial needs. The institutions are entrusted with the task of promoting the trade of the resulting quality products and repressing their violations. In the second case, on the other hand, the protection of food traditions is based on the voluntary sharing of knowledge and cultural significance, which transcends the mere product and the boundaries of its territory of origin, becoming common heritage.
