The bottles are then stored in a horizontal position, unlike other highfermentation beers, which, during secondary fermentation, are stored vertically. Indeed, given that it is a Traditional Speciality Guaranteed (TSG), the production technique is protected; however, the beer could also be produced elsewhere. In Italy, among the products recognized as Traditional Specialties Guaranteed (TSG), the following are noted: Neapolitan pizza, mozzarella cheese, and the traditional Amatriciana sauce. On May 13, 2024, Regulation 2024/1143 entered into force, which, by repealing Regulation 2012/1151, introduced significant amendments to the legal framework governing the protection of TSG Innovations, all aimed at promoting further development of the agri-food sector, ensuring more sustainable production models, more equitable food markets, and consequently fostering greater openness to rural development policies. In particular, the Regulation not only has the merit of consolidating into a single instrument the rules concerning geographical indications for agricultural products, including those for wine, which until now were contained within Regulation 2013/1308. Indeed, the regulation primarily merits recognition for assigning a leading role to producer groups in the governance of geographical indications, as well as for establishing definitive timeframes for the registration and modification of production regulations. It has also extended, in terms of protection, the use of ex officio enforcement mechanisms, including online procedures for domain names, and has enhanced the safeguarding of geographical indications for processed products. Furthermore, it has intervened upon the automatic registration system under the Geneva Act. Furthermore, the most significant developments pertain to sustainability, which have involved changes to the regulations concerning quality production. In this regard, the European legislator, with the aim of encouraging producers to adopt increasingly sustainable practices, has expressly authorized Consortia to amend their production regulations, including practices that may be more stringent than those prescribed by Union law or national law, provided that such practices are directed toward the implementation of environmental sustainability standards, social sustainability, economic sustainability, and animal welfare. Such sustainable practices are typified in Article 7, paragraph 2, of the new Regulation, and this choice appears to confirm the ongoing trend, established over the past decades, aimed at reinforcing the regulatory role of private entities within the agri-food market. 392 FRANCESCO TORCHIA
