The aim of the Hellenic Chamber of Hotels is to make Greek Breakfast a means of promoting the particular gastronomic culture of each locality throughout Greece, depending on the agricultural products and foodstuffs produced there, the particular climatic and geographical conditions, the history, the traditions and customs of each region (Ελληνικό πρωινό, 2025) and connect the primary sector (e.g., agriculture, fishing) with the tertiary sector (e.g., tourism) of the economy. Different types of Greek Breakfast have been created and certified since 2010, which include typical national agricultural products and foodstuffs, such as rusks, yoghurt, honey, nuts, olives, olive oil and fresh fruit. These agricultural products and foodstuffs form the basis of the Mediterranean Diet (ICH-UNESCO, 2013). The list also includes special local delicacies based on traditional recipes and agricultural products and foodstuffs specific to each region (e.g., Santorini tomato, Thassos Throumba olives, Monemvasia almond sweets, Grevena leek pie, firiki [miniature apple] Piliou, apaki [smoked pork] and staka butter from Crete, Corfu kumquat fruit, Bottarga Messolonghi [Greek caviar]). Protection Destination of Origin (PDO)6 and Protected Geographical Indication (PGI)7 agricultural products or foodstuffs play a key role in the standard breakfast of each region, linking local agricultural production with the tourism sector. In this way, local producers and small standardization units work together with hotels, stimulating demand for local agricultural products and foodstuffs and the local economy as a whole. By 2020 the Hellenic Chamber of Hotels has created 41 types of standard Greek Breakfasts and continues to enrich them, thus, enhancing the national tourism product while promoting the producers of each region (Τσαπάρας, 2020).
