I. INTRODUCTION Before addressing the legal challenges of opening and operating a restaurant in the Czech Republic, let’s take a brief look at Czech culinary preferences. Czech cuisine is heavily based on sauces, which play a central role in traditional meals. The Czech perception of sauces may differ from that of the rest of the world. The most typical Czech meal will usually include a sauce, meat and Czech dumplings. When we talk about “Czech dumplings”, it is important to emphasize that they are plain and not filled with anything. Simply put, they serve as bread. The most popular Czech sauces are called “svíčková” (creamy sauce), “rajská” (tomato sauce) and “koprová” (dill sauce). Czechs also tend to serve “guláš” (goulash) the same way (sauce, meat and Czech dumplings). Of course, Czech cuisine includes other traditional meals, e.g. “řízek” (chicken or pork snitzel), “vepřo knedlo zelo” (pork, dumplings and sour cabbage), “kapr” (carp) or “smažený sýr” (deep-fried cheese). Czechs will usually enjoy their meals with a pint (or more precisely a half-litre) of beer. Most of the Czechs nowadays, however, consume foreign cuisines, as well. Many Czechs even prefer foreign meals especially because of how heavy Czech cuisine tends to be. The most popular foreign cuisines among Czechs include Italian (by far the most popular one), American, Greek, Indian, Japanese and Chinese3. II. LEGAL REQUIREMENTS FOR RESTAURANT OPERATION Business premises To open a restaurant, securing suitable business premises is obviously essential. This leaves us with three options: renting, purchasing or building a property. Regardless of the choice, the premises must be officially intended for restaurant operations4. This applies not only to newly built properties but also to rented or purchased locations unless the previous tenant or owner operated a restaurant there (i.e. the premises are intended for restaurant operations). After building the premises, an inspection must be carried out to determine if the premises are in accordance with the building permit and the legal regulations5. 3 Kováčová, Eva.
