The research also does not include aspects of the public procurement law and similar practices in catering services, as, for example, organized institutions for providing food etc. In these cases, ‘catering’ is interpreted as supplying food, prepared centrally for consumption in other places. That is to say, the procurement and supply of food products by a preparation factory, factorykitchen, and thus does not concern catering in the meaning of this paper. This paper refers to restaurant establishments designed to prepare and/or to supply (ready) food and organize consumer services ‘on site’. V. HISTORICAL ELEMENTS FOR THE RESTAURANT CATERING CONTRACT Special (not legal) literature indicates that the term ‘catering’ is of English origin and in translation means ‘provide food for’33. Historically, it was formed from the Middle English word catour ‘buyer of provisions’34. In western European history, Jean-François Vatel is considered the founder of catering, who as maître d’hôtel was responsible for organizing banquets in honor of Louis XIV35. VI.
