It examines the complexity and diversity of these regulations, which cover aspects such as licenses, food safety, labor legislation, consumer protection, sustainability, and accessibility. The study highlights the impact of this complexity on the daily operations of gastronomic businesses, especially small and medium-sized enterprises, and the need to adapt the regulatory framework to new business models such as virtual kitchens and delivery platforms. Finally, it is emphasized that regulatory compliance can become a competitive advantage, and pathways for the simplification and regulatory harmonization in the Argentine gastronomic sector are proposed.
