The systemic value of the model Turismo DOP can be interpreted as the territory’s cultural infrastructure, where certified quality becomes a common language among institutions, enterprises, and citizens. In this sense, Turismo DOP is not an extension of food and wine tourism but a new evolutionary phase in which agri‑food quality becomes a lever for social innovation and environmental sustainability. 2.5. A definition of Turismo DOP The Treccani dictionary (Neologisms section) defines Turismo DOP as: “A form of food and wine tourism centred on experiences related to agri‑food products with Geographical Indications (PDO and PGI), born in territories recognised for the excellence of their productions and developed thanks to the commitment of Consortia of protection and enterprises belonging to certified supply chains, offering visitors authentic product‑based experiences with educational purposes, and representing a sustainable development model based on multifunctional agriculture.” III. LEGAL AND INSTITUTIONAL FRAMEWORK 3.1. National regulatory evolution The development of Turismo DOP in Italy is closely linked to the evolution of the regulatory framework, which in recent decades has progressively integrated rural tourism, certified agri‑food productions, and territorial sustainability policies. Law No. 730 of 1985 represents the first comprehensive reference to agritourism, introducing the principle of farm multifunctionality—i.e., the capacity of farms to carry out productive, recreational, and cultural activities.
