health claims made on food products (Regulation (EC) No 1924/2006 of the European Parliament and of the Council of 20 December 2006, as amended by Regulation (EC) No 109/2008 of the European Parliament and of the Council of 15 January 2008). Thus, a body of law has been created that has taken the name of food law, whose primary function is to provide consumer information and protection. Similarly, food traceability gains value, constituting a necessary tool to ensure product safety and to meet the needs of increasingly attentive and aware consumers. Therefore, a high level of consumer protection regarding food information is consolidated. There is also the consumer’s right not to be deceived about the expectation of tasting a typical product. In other words, if a tourist in Paris sees the sign of a Thai restaurant and decides to have lunch there, this tourist has the right for the dishes to be prepared and served in the Thai style. III. DISHES AS CULTURAL HERITAGE Food, therefore, and its preparation, belong to humanity. At the same time, in the evolution of human history, some dishes have entered the cultural heritage of a region or a people. Italy is a peninsula (with the characteristic boot shape) almost 1,200 kilometers long. Going up the peninsula, from Pantelleria to the Alps, every place, village, or city, boasts its typical product. The bacio pantesco, Sicilian cassata, pasta alla Norma, orecchiette alle cime di rapa, Neapolitan pizza, abbacchio alla scottadito, Bolognese lasagna, Sienese ribollita, trofie al pesto, Parma torta fritta (or gnocco fritto), Milanese risotto, polenta, Triestine jota (to name a few). IV. THE PROMOTION OF TYPICAL PRODUCTS AND MADE IN ITALY Typical products must therefore be valued, both concerning consumer expectations and as an identifying element of a people. Italy (like other nations), therefore, has an interest (worthy of protection) in promoting its typical products.
