Throughout this work, several critical findings have been identified: • The existence of a dual legal structure, composed of general national regulations and specific local rules, with the Autonomous City of Buenos Aires as a paradigmatic example. • A predominance of norms related to licensing, food safety, labor rights, and consumer protection, although regulations concerning sustainability, accessibility, and social responsibility are increasingly significant. • The considerable impact of regulatory complexity on the day-to-day operations of establishments, particularly small and medium-sized ventures, which often lack sufficient technical resources. • The need to adapt the regulatory system to new realities in the gastronomic market, such as virtual kitchens and the rise of delivery services.
