Of course authorized by the Directorate (INDECOPI) (Article 17). Regarding infringements for the improper use of an TSG, the procedure is governed by that of trademarks, as applicable, since they are elements of industrial property but of a different legal nature. It is understood that an administrative sanctioning process is required before the Directorate (INDECOPI), without prejudice to the criminal or civil sanctions that may apply depending on the severity of the infraction committed (Article 18). The comparative law method analyzes similarities and differences in a critical and logical way. Some trends in gastronomy or gastronomic tourism were also analyzed through documentary analysis. The research had a qualitative approach. The inductive-deductive method was used, with an exploratory and descriptive scope. 3 Anise bread from Concepción has become the first traditional specialty guaranteed (TSG) in Peru. Its registration was granted by INDECOPI to artisanal bread producers in Concepción, as well as to residents, during a festive ceremony held in the Plaza de Armas of the town. TSGs are industrial property tools used to protect traditional recipes and production methods; they add value to the marketing of food products, informing consumers about their attributes. In addition, they promote the economic reactivation of the regions through gastronomic tourism. Through Resolution 13299-2023, the Directorate of Distinctive Signs (DSD) decided to register Concepción’s anise bread in the registry of guaranteed traditional specialties, recognizing the traditional nature of this food preparation, native to the province of the same name. In this regard, it was verified that, for more than 30 years, artisan bakers in Concepción have maintained the use of traditional ingredients such as stone-ground regional wheat flour, the use of anise and spring water, as well as a production method that incorporates manual preparation, planing and rounding of the dough, the use of unique utensils and wood-fired baking. This delicious product stands out for its round shape, with an approximate diameter of 10 cm and around 3.5 cm high, weighing approximately 60 grams, as well as neutral and brown tones. It is presented in two layers (one loaf on top of the other), has anise grains on top, is neutral in flavour (between sweet and salty), has a crunchy texture on the outside and soft on the inside, and has anise aroma.
