2000 with the growth of Peruvian gastronomy and specifically the period from 2000 to 2019, the accommodation and restaurant sector improved, growing at 5.1% annually, that is, exceeding the 4.7% growth of the economy. This indicates that in general tourism is an activity that drives the economy as well as generating employment. In this regard, inbound tourism at the end of 2019 reached the sum of 4.4 million visitors and at the beginning of 2020 this sector was greatly affected due to COVID 19, 4 years have passed and although the boom in Peruvian tourism began to take center stage, it has not yet managed to match the figures of 2019. According to Ramos, in his journalistic note published in the Diario la Republica, the year 2023 7was a very bad year, unofficially assuming that by 2024 it would reach 3.2 million tourists and trusting that by 2025 it would be approaching the figure for 2019 (p.12).
