Documentary technique: Statistical reports According to the evaluation and the definition of “Gastronomic Resource” by the restaurant regulations, it is pertinent to consider food products as components of gastronomy (gastronomic tourism), reinforcing the relevance to evaluate the behavior of gastronomy in the national market, since in some way it correlates with the ETG, despite the fact that there is only one ETG in Peru. Based on the above, various secondary sources have been reviewed, such as statistical reports prepared by public and private institutions that express some parameters and indicators of the behavior of gastronomic tourism, 6which are shown in Table 3. Elías, García, Schling , Mount (2022); interpreting Figure 1, on the figures of the Gross Domestic Product (GDP) inherent to the National Economy compared to those of accommodation and restaurants, report that during the period 1994-2000, the GDP of this sector grew at 2.6% annually, well below the 3.3% growth of the economy.
