Use or utilization is understood to market said food preparation in a market, as long as it complies with the specifications, which is subject to controls; now, according to the Peruvian standard: who controls that person (ex ante), in terms of quality, authenticity of the product? The Peruvian standard does not contemplate it, but it does have ex post controls because the Directorate can impose sanctions established in the legislation through inspection or complaint by the interested parties. In this regard, the regulations of the EU and Ecuador do contemplate both ex ante and ex post control, a defect that must be corrected in the Peruvian case 9. -The case of the registration of anise bread in Concepción (Peru) shows how a TSG can revitalize a region by attracting tourists and generating employment. However, this success is not easily replicated in other areas due to the lack of infrastructure and support, among other initiatives that must arise from the suppliers or vendors of traditional food products themselves, together with local or regional authorities as part of a strategy for local or regional growth and development; adding that the impact of this TSG in the interior of Peru could be evaluated in the future, and if necessary, be a model for other initiatives to register other TSGs in the regions. In the Peruvian case, there is still another challenge, due to the scarce general recognition of TSGs in the country, that of promoting and disseminating this tool to expand its reach to the range of traditional food products that Peru has.
