CONCLUSIONS -The varied range of agricultural products that exist in Peru, given its geography and natural resources, make it possible for localities or regions to have the potential for traditional gastronomy in such a way that it can contribute to Peruvian tourism and highlight the intangible heritage (culinary tradition); that is why the protection of TSGs in the Peruvian case refers to “food preparation” or food product. Well-promoted and disseminated TSGs would be a necessary tool for gastronomy, tourism and national heritage. -At the Latin American and subregional level, there are no regulations for the registration of ETGs, except for Peru and Ecuador in the Andean Subregion, both of which have agreed to regulate ETGs with separate regulations for their registration. Likewise, the registration of ETGs in Peru and Ecuador is of a national nature, not supranational as is the case in the European Union. -TSGs represent a key tool to protect Peruvian cultural heritage and foster economic development by promoting traditional food products. The established legal framework reinforces the importance of TSGs as collective goods, ensuring their preservation, competitiveness in the market, as well as consumer protection related to the quality and authenticity of food products. -The impact of TSGs is evident in cases such as Concepción anise bread, whose registration has not only strengthened Junín’s cultural identity, but has also created jobs and promoted gastronomic tourism. -In the regulatory differentiation aspect of the registration of ETGs in Peru, it is inherent to Industrial Property, which constitutes an element of this property system, which allows for better protection in the case of the EU, which only gives rise to the right to use.
