Years later, Giancarlo Dall’Ara, an expert and professor of Tourism Marketing, refined a model of tourist hospitality known as Albergo Diffuso (AD). This model is based on the unified and integrated management of accommodations located in multiple pre-existing, separate buildings within an inhabited historic center, with the aim of fostering sustainable territorial development (Dall’Ara & Villani, 2015).12 This concept therefore differs from traditional accommodation structures due to its “horizontal” configuration, distributing rooms and services in spaces integrated within the architectural heritage of a small village. From a legal point of view, the first regulation governing the AD model is Sardinia Regional Law No. 9 of 1998, whose Article 3 defines the AD as a receptive structure “located in the historic centers of municipalities, characterized by the unity of the reception service and common services, with housing units in separate premises no more than 200 meters from the central building.” Currently, the AD is a category provided for and regulated by all twenty Italian regions. The Albergo Diffuso is presented as an integrated model of tourism development that promotes the valorization of the “minor” cultural heritage (Lo Campo, n.d.)13 of small villages, through, on the one hand, the recovery and conservation of architectural heritage and, on the other hand, the safeguarding of intangible heritage consisting of local cultural traditions and practices.14 Among these, the enogastronomic supply and agri-food production occupy a prominent place (Droli & Dall’Ara, 2012).15 While attention to culinary tradition enhances the “sense of place” and contributes to the development of an immersive experience in the culture of the territory;16 on the other hand, the use of local ingredients and products allows the AD to establish strategic links with producers in the agri-food sector and to configure itself as a relevant 12 Dall’Ara, G., & Villani, T.
