From this perspective, the TSGs registered as traditional food products are related to producers who are owners or possessors of food product sales centers, which are also places or businesses of restoration or restaurants that are regulated by the restaurant regulations. This regulation defines gastronomic resources as a set of foods and drinks from one or several regions, evidencing the connection of the TSG regulations with the tourism and gastronomic regulations, and even more so, with those of intangible cultural heritage (traditional food dishes). Given this regulatory reality, there is an underlying promotion of tourism and gastronomy (culinary tradition) as an initiative of the localities and regions, and why not, of the national government. In relation to the national establishment, the issuance of Supreme Decree 0092022 has been verified, declaring the second week of September as the day of Peruvian cuisine, being praiseworthy, that in one of the recitals it clearly states: That the issuance of this standard will allow raising awareness regarding the wealth of biodiversity and culinary knowledge of each region, promoting healthy eating habits with regional and seasonal ingredients, protecting and preserving traditional culinary techniques and natural resources, strengthening identity, respect for cultural diversity and enhancing the economic and social impact of cooking as part of the tourism sector (p.2) Commenting on the above, the protection of culinary techniques and knowledge is highlighted to promote eating habits as well as to enhance the social and economic aspects of the regions based on tourism and gastronomic businesses based on traditional Peruvian cuisine and drinks. In relation to traditional drinks, before the previous norm, the Law was published that declares the promotion and diffusion of Peruvian Wine and Pisco as traditional national drinks to be of national interest, which similarly contributes to the purposes.
